Easy Zucchini Recipes – 7 Simple Ideas for Summer days

Zucchini is one of those vegetables with no limits — you can fry it, chip it, simmer it into a ragù, or turn it into a full ratatouille. The only real boundary is your imagination. And summer is the best time to cook with it. That is when zucchini is at its most flavourful — tender, sweet, and full of moisture. This post contains affiliate links.

We have been growing zucchini in our garden since I was a child. It always thrived surprisingly well and produced more than we ever expected. So we cooked with it constantly. I have put together a handful of recipes that might be a little less familiar than the usual ideas. But they are all worth trying.

Zucchini Pasta with Tomato Sauce

This is a comforting, veggie-packed pasta that comes together in about 30 minutes. The zucchini softens slowly in the pan and releases its juices into the tomato sauce. The result is rich, hearty, and deeply satisfying.

Ingredients:

500g fusilli
3 small zucchini
3 garlic cloves
3 tbsp olive oil
1 tbsp tomato paste
1 can chopped tomatoes
100g cherry tomatoes
Parmesan or your favourite cheese
Salt and pepper

Instructions:

Cook the pasta according to the package instructions. Meanwhile wash and chop the zucchini, cherry tomatoes, and mince the garlic. Heat the olive oil in a deep pan and lightly fry the garlic. Add the zucchini. After a few minutes season with salt and pepper, stir, cover and cook on low heat. After about 15 minutes, when the zucchini has released its juices, add the canned tomatoes, tomato paste and cherry tomatoes. Stir and simmer on low heat for about 1 minute. Finally add the cooked pasta and serve sprinkled with fresh parsley and grated cheese — or without.


Zucchini Noodles with Coconut Shrimp

This is one of those zucchini recipes that feels light but still filling. The spiralised zucchini replaces pasta entirely. And the coconut shrimp broth makes it taste like something from a restaurant.

Ingredients:

1 zucchini
1 spring onion
1 sachet Asian broth
A handful of frozen shrimp
Chilli to taste
Salt and pepper

Instructions:

Bring salted water to a boil. Spiralise the zucchini into noodles using a julienne peeler (use this Julienne Peeler or this Vegetable Spiralizer) then boil for 2 minutes in the salted water.. Finely chop the spring onion and add to a pan. Add the frozen shrimp shortly after. They will release a little water and steam gently. Meanwhile dissolve the broth sachet in 170–200ml warm water — or up to 200ml depending on consistency — and leave to stand. Add a little chilli to the steaming shrimp if desired. Pour the broth over the shrimp and stir briefly. Add the zucchini noodles and toss everything together.


Zucchini Fritters with Garlic Sour Cream

These zucchini fritters come together quickly and taste far better than their simplicity suggests. They are light, easy, and genuinely satisfying — and they make a regular appearance in my kitchen every summer. And if you go easy on the sour cream, they are not heavy on calories either. But they still keep you full.

Ingredients:

2 small zucchini
2 small garlic cloves
2 small eggs
Salt and pepper to taste
Fresh parsley and chives to taste
4–5 tbsp flour or oats
A little oil for frying
330g sour cream

Instructions:

Grate the zucchini on a Box Grater. Salt lightly and leave to stand for about 20 minutes until it releases its liquid. Squeeze out the liquid thoroughly. Mix the zucchini with one garlic clove, the eggs, and flour until smooth. Add pepper, chives, and parsley if desired. If the mixture is too wet, add more flour. Heat a little oil in a pan — only a small amount is needed if the pan is non-stick. Spoon the mixture in and spread it out as thinly as possible. Cook on medium heat for a few minutes until golden on one side, then flip. Cook on medium heat so it does not burn but the zucchini softens through. While the fritters cook, grate the second garlic clove into the sour cream. Add a little salt and pepper and leave to rest briefly. Dip the fritters into the garlic sour cream when serving.


Crispy Fried Zucchini

This is a classic zucchini recipe that never fails. Some of my favourite food memories involve my mum making fried zucchini alongside Sunday roast chicken — my sisters and I absolutely loved it. And it is one of those dishes I still love making today.
Crispy on the outside, soft on the inside — and incredibly easy to make. Serve it as a starter, a side, or just a snack straight from the pan.

Ingredients:

Zucchini (as much as you like)
Flour
Egg
Breadcrumbs
Oil for frying
Salt
Mayonnaise

Instructions:

Wash the zucchini. If small, slice into rounds. If very thick, peel it first — and if the seeds are large, hollow out the centre to get clean rings. Lightly salt the sliced zucchini and toss to coat. Set up three separate bowls with flour, beaten egg, and breadcrumbs. Prepare a deep fryer or heat oil in a pan or pot and begin warming it. Coat each slice first in flour, then in beaten egg, then in breadcrumbs. Fry until golden brown on both sides on medium heat — so the coating does not burn but the zucchini softens through. If there is leftover flour and egg, my mum always used to mix them together, add a little salt, and drop spoonfuls straight into the hot oil. She called it “poor man’s bread.” The key is that the batter should not be too thick — otherwise it turns out unpleasantly hard. Serve the fried zucchini with mayonnaise. Or make a side of rice or mashed potatoes.


Baked Zucchini with Chicken and Cheese

This is a proper crowd-pleaser. It is creamy, cheesy, and filling enough to serve as a main course. Summer zucchini works especially well here because it stays tender without going mushy.

Ingredients (serves 4):

600g chicken breast
Salt and pepper to taste
A little oil
400g zucchini
1 leek
350g grated cheese
300ml cooking cream
1 egg
½ tsp cayenne pepper

Instructions:

First slice the chicken, pound it lightly, then season both sides with salt and pepper. Peel the zucchini and slice into finger-thick rounds. Clean and thinly slice the leek. Grease a baking dish or roasting tin with a little oil or butter. Arrange half the zucchini rounds on the bottom. Place the leek and chicken on top. Sprinkle with half the cheese. Add the remaining zucchini rounds on top. Whisk together the cream, egg, salt, pepper, and cayenne pepper if using. Pour over the assembled dish. Sprinkle the remaining cheese on top. Bake in a preheated oven at 355°F for 30–40 minutes until beautifully golden.

Paleo Zucchini Chips

These zucchini chips are crispy, light, and completely addictive. They are also paleo-friendly and require almost no effort. This is one of those zucchini recipes that disappears faster than you expect.

Ingredients:

4 large zucchini, thinly sliced
30ml olive oil
Salt
½ tsp smoked hot paprika (optional)
½ tsp ground cumin (optional)

Instructions:

First slice the zucchini, salt lightly, toss and set aside. The zucchini will release its liquid. Drain off the liquid. Then lay the slices between two layers of paper towel and press firmly to absorb the moisture. Preheat the oven to 250°F. Line a baking tray with parchment paper and brush with olive oil. Spread the zucchini slices out on the paper and brush lightly with oil. Season with additional spices if desired. Bake for 1–2 hours until crispy and golden. Finally leave to cool on paper towels to absorb any extra oil.


Parmesan Zucchini Bites with Mint Dip

These are elegant enough for a dinner party but simple enough for a Tuesday evening. The parmesan crust gets beautifully crispy in the oven. And the cool, herby yoghurt dip is the perfect contrast.

Ingredients:

2 medium zucchini
Salt, pepper, or other spices to taste
1½ cups freshly grated Parmesan

For the dip:

150–200g thick Greek yoghurt
1–2 garlic cloves, crushed
Juice of half a lime or a little lemon juice
Half a bunch of fresh dill or mint, finely chopped
Salt and a pinch of black pepper
1 tsp olive oil

Instructions:

First preheat the oven to 355°F. Line a large baking tray with parchment paper. Slice the zucchini into ½–1cm rounds. Press between paper towels to remove moisture. Arrange on the tray and season. Spoon about one teaspoon of freshly grated Parmesan onto each slice. Bake for 20–22 minutes until the tops are golden. While the bites bake, add the crushed garlic, dill or mint, lime juice, salt, and pepper to the yoghurt. Stir until smooth and drizzle olive oil on top. Leave in the fridge for 15 minutes so the flavours can develop. Serve the zucchini bites warm with the dip on the side.

Summer is when zucchini is at its absolute best. It is sweeter, more tender, and more flavourful than at any other time of year.
