Instructions:

Preheat the oven to 345°F (175°C). Butter and lightly flour a bundt or loaf pan. Beat the sugar and eggs together until slightly fluffy, then add the milk, room-temperature butter, and cooled pumpkin puree and mix thoroughly. Take three quarters of the flour and mix with the baking powder, baking soda, and spice mix. Add to the egg mixture and stir to combine. Divide the batter into two portions. Mix the remaining quarter of the flour into one portion, and the cocoa powder into the other. Instructions:

Cook the diced squash in salted water. Reserve a cup of the cooking liquid. Drain and blend the squash until smooth, adding a little of the cooking liquid to loosen. If using frozen spinach, heat it through and squeeze out the excess liquid. If using fresh, wash and roughly chop it. Preheat the oven to 345°F (175°C).

Heat a little olive oil in a pan and cook the onion until soft, then add the garlic — watch carefully so it does not burn. Add the squash puree and season with salt and pepper. Add a little of the cooking liquid if the sauce is too thick, then stir in 2 tablespoons of parmesan. Dice the pancetta into small cubes and cook in a separate pan until crispy.

In a bowl, mix together the spinach, ricotta, remaining tablespoon of parmesan, egg, salt, pepper, and the drained pancetta. Lightly oil a 23x30cm (9×12 inch) baking dish and spoon some squash sauce over the base. Spread the ricotta mixture over each lasagna sheet, roll up, and place seam-side down in the dish.
