Homemade Sweet Roll Recipes — Dreamy Fillings for Every Mood

These homemade sweet roll recipes started as a curiosity — those little roll shops have been popping up everywhere lately, always packed, always tempting. Places that sell nothing but rolls in every flavor imaginable — and they are always packed. So it got me thinking that this is absolutely something worth trying at home. Sweet roll recipes are more approachable than they look, and once you have the dough down, the filling possibilities are genuinely endless. Whether you go sweet or savory, simple or indulgent, these are the ones worth starting with.

Chocolate Rolls

Ingredients:

For the dough
750 g all-purpose flour + extra for rolling
90 g granulated sugar
50 g fresh yeast
300 ml lukewarm 3.5% milk
2 eggs
120 g softened butter
½ tsp salt

For the filling
150 g softened butter
60 g Dutch-process cocoa powder
150 g granulated sugar

For greasing the pan
50 g butter or parchment paper

For the topping
200 ml milk
2 tbsp powdered sugar

Instructions

Add all the dough ingredients except the salt to a mixing bowl. Knead using a stand mixer, or if you have strong hands, you can knead it by hand as well. Knead for about 10 minutes. Then add the salt and knead for another 5 minutes. Cover and let the dough rise in a lukewarm place for about 30 minutes. It should double in size.

Once the dough has risen, roll it out into a rectangle about 0.5 cm thick. Spread with butter, sprinkle with the cocoa-sugar mixture, and roll it up into a log. Cut it into pieces about 2 cm thick. It is best not to use a knife, as this can flatten the rolls. Instead, use a piece of thread: place the thread underneath the dough, bring both ends together on top, cross them over each other, and pull until the slice is cut through. This should make about 20 rolls.

Line a baking pan approximately 35 × 40 cm with parchment paper, place the rolls in the pan, and cover and let them rise for another 20 minutes. It’s okay if they are placed fairly close together, as we want them to touch as they rise and bake.

Preheat the oven to 180°C (350°F) and bake the rolls using conventional top-and-bottom heat for about 25 minutes, until fully baked. Once the rolls are nicely browned, drizzle them with a little milk and return them to the oven for another 2–3 minutes. After 15–20 minutes, sprinkle with a little powdered sugar.

Pecan Sticky Buns

Pecan sticky buns with caramel glaze and chopped pecans freshly baked in pan

Ingredients

2 1/4 tsp Active Dry Yeast, 1 packet
1/2 cup Warm milk
1 Large Egg, room temperature
1/2 cup Granulated Sugar
1/4 cup Unsalted Butter, room temperature
1 tsp Salt
1 cup Buttermilk
4 1/2 – 5 cups All-Purpose Flour, (2 cups, then 2 1/2-3 cups)
cinnamon sugar filling
1/4 cup Granulated Sugar
1-2 tbsp Ground Cinnamon
3 tbsp Unsalted Butter, melted

Caramelized pecan topping
1/4 cup Unsalted Butter
1/2 cup Dark Brown Sugar
1/2 cup Light Corn Syrup
1 tsp Cinnamon
1/2 cup Chopped Pecans

Instructions

Dough
As the first step, dissolve the active dry yeast in the warm, but not hot, milk in a bowl, sprinkle with a little sugar, and let it sit for about 5–10 minutes, until the yeast starts to activate.
Mix the egg, granulated sugar, and unsalted butter until you have a smooth mixture. Add the yeast mixture, buttermilk, and 2 cups of all-purpose flour, then mix well.

Start kneading the dough, gradually adding the remaining 2½–3 cups of all-purpose flour until you have a soft dough. Add the salt only at the end and continue kneading for a few more minutes. Salt can interfere with the yeast’s activity, so it is best to add it only at the end. Place the dough in a greased bowl, cover with a clean kitchen towel, and place it in a warm, draft-free place for 1 hour, or until the dough has doubled in size.

Cinnamon-Sugar Filling:
In a small bowl, mix together the granulated sugar and cinnamon. Set aside. Melt the butter slightly, then set it aside (this will be spread over the dough first, before the cinnamon sugar).

Caramelized Pecan Topping:
Line a 33 × 23 cm baking pan with parchment paper. In a saucepan over low heat, melt together the unsalted butter, dark brown sugar, light corn syrup, and cinnamon until the mixture is smooth and well combined. Pour the mixture into the prepared pan, then sprinkle the chopped pecans over the top. Set aside.

Assembling the Sticky Rolls:
Turn the dough out onto a clean, lightly floured surface.
Using a rolling pin, roll the dough into a rectangle about ½ cm thick. Spread with the melted butter, leaving about 1.5 cm (½ inch) around the edges. Sprinkle the cinnamon-sugar mixture evenly over the top. Starting from the longer side, roll up the dough like a jelly roll.

Using the thread technique (see previous recipe), cut the roll into about 12 equal pieces and place them in the pan over the caramel-pecan layer, leaving a little space between them. Then let the rolls rise again. Cover with a kitchen towel and place in a warm place for 1 hour.

Preheat the oven to 190°C (375°F). Bake for 20–25 minutes, or until golden brown.

Instructions:

Dough
Add the yeast to the lukewarm milk, sprinkle with a little sugar, and let it sit for 10 minutes. In another bowl, lightly beat the eggs. Set aside. Mix the sugar with the eggs, then add the butter, yeast mixture, and flour. (Make sure not to pack the flour into the measuring cup when measuring; it should remain loose.) Finally, add the salt and start kneading. Once the dough comes together, knead for another 5 minutes.
Place the dough in a large bowl greased with butter or oil, cover with a kitchen towel, and let it rise in a warm place for 1 hour.

Apple Filling
Place the diced apples, sugar, lemon juice, cinnamon, and cornstarch in a saucepan. Cook over medium heat until thickened. Then let it cool completely.

Cinnamon Filling
In a small bowl, mix the butter, brown sugar, and cinnamon until well combined.

Assembling the Dough:
Roll out the dough into a large rectangle, about 0.5 cm thick. Spread the cinnamon filling evenly over the dough. Then spread 1 cup of the apple filling over the dough. The remaining filling will go on top of the rolls. Roll up the dough into a log. Cut the dough into 12 rolls. Line a 23 × 33 cm (9 × 13 inch) baking pan with parchment paper and place the rolls in the pan. Cover the pan with a kitchen towel and let the rolls rise for 20 minutes. Preheat the oven to 190°C (375°F). Bake for about 30 minutes, until the tops of the rolls are light golden brown.

Cream Cheese Glaze:
Mix the cream cheese, powdered sugar, vanilla, and milk until smooth, then continue mixing until it reaches a pourable consistency. Pour the glaze over the tops of the rolls and spread it evenly. Finally, place some of the reserved apple filling on top of each roll.

Pistachio Cinnamon Rolls

Ingredients

3-1/4 cups all-purpose flour
1/4 cup sugar
1 package (1/4 ounce) quick-rise yeast
1/2 teaspoon salt
1 cup whole milk
1/4 cup butter
1 large egg, room temperature
1/4 cup butter, melted
3/4 cup packed sugar
1 teaspoon ground cinnamon
1 cup finely chopped pistachios

cream cheese frosting:
1 package (8 ounces) cream cheese, softened
1/4 cup pistachio cream
1 cup confectioners’ sugar (to taste)
1/2 teaspoon ground cinnamon

Instructions:

Heat the milk until lukewarm, add the yeast and a little sugar, and set aside for a few minutes. Mix the egg with the sugar, then add the butter, followed by the yeast mixture, and finally the flour and salt. Knead for 5–10 minutes. The dough will be slightly sticky. Cover and let it rise for 30 minutes.
Roll out the dough into a rectangle about ½ cm thick. Brush with melted butter and sprinkle with the sugar and cinnamon mixture. Finally, sprinkle with pistachios.

Starting from the longer side, roll up the dough and cut it into 12 pieces using a very sharp knife or the thread technique. Arrange the rolls next to each other in a baking pan lined with parchment paper. Cover and let them rise for 30 minutes.

Bake in a preheated oven at 165°C (330°F) for about 30–35 minutes, or until golden brown.
Mix the cream cheese with the pistachio cream. Add powdered sugar if the pistachio cream isn’t sweet enough, then spread the frosting over the tops of the rolls.

Instructions:

Add the yeast to 1 cup of lukewarm milk, sprinkle with a little sugar, stir, and let it sit for a few minutes. Mix the eggs with the sugar, then add the milk, melted butter, and finally the salt, and mix well. Add the flour and the yeast mixture. Knead the dough until it has a smooth, silky texture. Cover and let it rise in a warm place for about 30 minutes.
Meanwhile, combine the raspberries, sugar, lemon zest, and cornstarch and heat until the mixture thickens. Let it cool slightly.

Divide the dough in half. Roll out one half into a rectangle. Spread with 4 tablespoons of butter and sprinkle with ¼ cup brown sugar. Spread half of the raspberry filling over the dough, then roll it up into a log. Cut into approximately 2-inch (5 cm) slices using a piece of thread. Place the slices in a baking pan lined with parchment paper, approximately 9 × 13 inches (23 × 33 cm). Repeat the same process with the other half of the dough.

Cover with a kitchen towel and let the rolls rise in a warm place for about 1 hour. Preheat the oven to 175°C (350°F), then bake until the tops are golden brown and the centers are fully baked. In a bowl, mix together the cream cheese, butter, powdered sugar, and lemon zest, then spread the frosting over the tops of the rolls.
